In the 1980s Colorino, a traditional Tuscan vine, had almost disappeared; on the Santedame estate, then a recent acquisition by Ruffino, there was an old Colorino vineyard next to a medieval hermitage, a “Hermitage”, a place of shelter for pilgrims traveling to Rome. Fermentation for approximately 10 days in temperature-controlled steel tanks at 28°C. The maceration on the skins continues for another 10 days until the malolactic fermentation takes place. Matured for 30 months in concrete tanks and barriques.
