Manual harvest with bunch selection on a sorting table; after destemming and soft pressing, the grapes remain in contact with the skins for 10-12 days, with daily pumping over. Malolactic fermentation and maturation in stainless steel tanks for 5-6 months follow; the wine is then aged in the bottle.
Intense ruby red color; nose of plum, morello cherry, and spices; fresh and smooth on the palate, with good acidity and persistence.
Meat appetizers, grilled meats, medium-aged cheeses.
