Description

Manual harvest, spontaneous fermentation with indigenous yeasts in steel and maceration for approximately 15 days; maturation in exhausted tonneaux for 10 months, refinement in bottle for one year.

Tasting

Ruby red color with garnet reflections; nose of small red fruits and blueberries, with notes of undergrowth and violet, balsamic and mineral hints; structured, fresh and savory sip, with a long and slightly spicy finish.

Ground first courses, stewed red meats, roasts, cured meats and cheeses.
