Description

First fermentation of the base wine in large larch and oak barrels, then traditional refermentation in the bottle. Dégorgement no earlier than 72 months.

Tasting

It appears in the glass of a golden straw yellow color with fine perlage. Hints of tropical fruit, undergrowth, wildflower honey, marzipan, yeasts and iodine. Creamy on the palate, with elegant flavor and tasty, citrusy freshness, it closes on exotic notes reminiscent of American hops.

Pairings

Try it with the risotto with rennet apple and mocetta, smoked trout fillet.
