Description

First fermentation of the base wine in large larch and oak barrels, then traditional re-fermentation in the bottle. Dégorgement not before 72 months.

Tasting

It presents itself in the glass of a golden straw yellow colour with fine perlage. Hints of tropical fruit, undergrowth, wildflower honey, marzipan, yeast and iodine. Creamy taste, with elegant savouriness and tasty, citrusy freshness, it closes on exotic notes reminiscent of American hops.

Pairings

Try the risotto with rennet apple and mocetta, smoked trout fillet.
