Of great importance for the production of this wine are both the careful care of the vines and the ideal location for the production of sparkling wine, and above all the great complexity of the geological composition of the soils originating from the movements of glaciers over the millennia. In them, the vines sink their roots and transfer part of this complexity and richness to the grapes. Vines over 15 years old are trained to the gujot and low spurred cordon system. The soil consists of massive glacial and colluvial deposits, characterised by heterogeneous mixtures of gravel, sand and fine polygenic sediments. The grapes are harvested by hand after organoleptic tasting. Soft pressing of the whole grapes at a temperature below 15°, with a maximum must yield of 55% vol./weight. Maturation of the sparkling wine base in stainless steel. Maturation sur lies for a minimum of 36 months.

Pale straw yellow colour, with fine perlage. Rich and complex nose of floral and fruity notes, and hints of fresh bread and vanilla. The palate has good structure, acidity and flavour; long and clean.

Seafood starters, shellfish and raw fish. Ideal as an aperitif.
