Dolcetto
One hectare of vineyard on medium-textured calcareous soil tending towards silty. Fermentation and maceration: in steel tanks at a controlled temperature of 25-27 °C for 6-8 days. Maturation and fermentation: 5-7 months in steel or concrete, 1-2 months in bottle.
Intense ruby red color. Fruity notes of wild berries and raspberries, nuances of red beetroot and red wild flowers. Medium intensity and body, fresh, with light tannins.
Cold cuts and medium-aged cheeses, first courses of meat or vegetables.
