Description

Manual harvest in boxes with selection in the vineyard in the last ten days of September; cryomaceration with thermo-conditioned fermentation in steel at 15°C, maturation in steel for 6 months.

Tasting

Straw yellow color with bright yellow nuances. Strong nose of sage and notes of bay leaves and rosemary, with hints of pear and citrus. Austere, consistent and very persistent sip, with a mineral note and an aftertaste reminiscent of clementine peel.
