Manual harvesting in bins and part in boxes, with selection in the vineyard at the beginning of October. Harvesting is delayed by aiming for over-ripening in the vineyard, with painstaking selection of the bunches. The grapes are crushed, destemmed and left to ferment in temperature-controlled stainless steel tanks. From the earliest stages, daily pumping over and several delestages are carried out. Post-fermentation maceration is prolonged by a few days and the new wine rests for a few weeks in stainless steel to favour natural clarification; it is then racked into small-capacity wood, where it completes malolactic fermentation. Maturation in small oak barrels for 12-18 months, bottle-ageing for 6 months.
