Manual harvest at the end of September, crushing-destemming within two hours of harvesting; maceration and spontaneous fermentation on the skins for at least 15 days, in concrete barrels, without temperature control and with frequent pumping over; soft pressing. The wine matures in concrete barrels and does not undergo any clarification or filtration; refines in bottle for at least 3 months before sale.

Floral and fruity nose, of violet, blackberry and plum, with notes of cocoa and coffee; agile and elegant sip, with smooth tannins and long persistence.

Grilled meats, cured meats and cheeses.
