Sangiovese
The grapes, selected on the vine, are destemmed and fermented at a controlled temperature, between 22 and 26°C. The malolactic fermentation is carried out and the extraction processes conducted via delestages. Maceration lasts approximately 3 weeks. The wine is aged in steel tanks on its fine lees until bottling.
Brilliant ruby red colour; intense nose with notes of morello cherry, small red fruits and Mediterranean scrub. Smooth and delicate sip, with sweet, ripe and velvety tannins. The finish is savory and juicy with hints of hazelnut and citrus.
Livorno-style cod, caciucco, red and white meats, mature cheeses.
