Description

From a micro-plot planted on vertical schist. Elliptical because it’s cultivated in the simplest possible way. The grass is cut by the sheep, and only two sulfur treatments are used (no copper is used on the entire estate). Crushed and then immediately pressed, it ages in used barriques for eight months.

Tasting

Freshly squeezed blackcurrant and raspberry juice. A sleek, graceful palate. Just a hint of tannins and a compulsive sip.

Meat appetizers, cured meats and cheeses, grilled white meats.
