Soft pressing of whole grapes. Spontaneous fermentation with native yeasts, no use of fermentation aids. No sulfur dioxide is used on the grapes or in the must. Fermentation and refinement take place in steel, with the use of some wooden barrels. Malolactic fermentation is not controlled, it is normally carried out completely. Refermentation in the bottle according to the Classic Method, with permanence on the yeasts for at least 30 months.
Straw yellow color with aromas of flowers and yellow fruit. Elegant aroma and fine, creamy bubbles.
Seafood appetizers, crustaceans and molluscs.
