BottlesVery delicate pressing with pneumatic press; cooling of the must and decantation in insulated tanks; fermentation in stainless steel tanks at a controlled temperature of 14°C for approximately 20 days; maturation for 7/8 months in steel tanks. Bottle aging on yeasts for a minimum of 6 years. Manual riddling on pupitres.
Straw yellow color with very fine and persistent perlage; floral nose of chamomile and broom, with delicate notes of hazelnut and bread crust; mineral, fine and complex sip, with hints of Etna apple and medlar, mint and aromatic herbs; great persistence.
Raw seafood, delicate appetizers, shellfish.
