Manual harvest in small crates with selection of the grapes in the vineyard in the third ten days of August. Soft pressing of whole bunches is carried out with extraction of less than 50% of free-run must; fermentation takes place at a controlled temperature of around 18°C, 60% in stainless steel tanks and the remaining 40% in barriques and tonneaux. In the fermentation vessels the must matures and partly carries out malolactic fermentation. Small percentages of reserve wines from two or three previous years are added to the cuvée. Bottle aging on yeasts for 60 months.
