Cabernet Sauvignon, Merlot, Cabernet Franc
Manual harvest in different periods depending on the grape variety. Vinification in steel tanks thermoregulated at 28 degrees. Spontaneous fermentation with Native yeasts. Frequent pumping over and maceration for about 25 days. Aging for 15 months in French oak barriques, 40% of which are new.
Dense ruby colour; on the nose berries, tobacco, resin and sweet spices, with balsamic notes of pine needles, eucalyptus and licorice. Soft and enveloping sip, fresh and tasty, supported by a dense tannic texture. Long finish with the return of berry.
Ground first courses, tasty soups, red meats, roasts, game, mature cheeses.
