Description

Manual harvest of the grapes in boxes, each grape is processed separately; spontaneous fermentation without the addition of yeasts lasts, including maceration, between 25 and 30 days. The wines mature for 18/30 months in second passage wood.

Tasting

Ruby red colour, very consistent. Broad nose, of small red fruit jam, cedar wood and black pepper. Very warm and concentrated sip, soft, with well-present tannins, very long but not at all heavy.

Grilled red meats, braised meats and stews, mature cheeses.
