Right on the top of the Arborina cru hill, Nadia Curto jealously preserves a small Freisa vineyard, an indigenous vine for which such prestigious terroirs are not generally reserved. The Freisa harvest normally takes place in the second half of September. The grapes, harvested by hand in small ventilated boxes, are pressed and destemmed, and fermented without the addition of selected yeasts. A few days before the harvest, some baskets of grapes are simply collected to create the pied de cuve, that is, a fermentation starter with the yeasts naturally present on the skins. After a maceration of approximately 8 days with manual pumping over and punching down, it is drawn off into a stainless steel tank where it undergoes malolactic fermentation; it is then decanted into used barriques and after aging for 1 year it is bottled in the summer months without clarification or filtration.
