Manual harvest in the last ten days of October; the overripe grapes are hand-picked and brought whole to the cellar. After gentle pressing, the must undergoes cold static clarification and then ferments in new oak barrels at a temperature of 12°C for approximately three months. The wine then ages for four months in steel tanks and further in bottle before release.
Bright yellow color with golden highlights; intense nose of apricot, broom flowers, and tropical fruits; rich and smooth sip, mineral, with great aromatic persistence, elegant and savory, with hints of dried apricot, sultanas, and candied fruits.
Second courses of fish, crustaceans, molluscs, white meats, mature cheeses.
