Description

Manual harvest in the second or third ten days of September. After fermentation at a controlled temperature, it is drawn off and decanted into steel tanks. The refinement is then completed with a short passage in large oak barrels.

Tasting

Particular and unmistakable aroma, made up of fruity notes reminiscent of raspberry, morello cherry and blackberry. It also has evident floral hints identifiable with violet.

Stewed red meats, game, boiled meats, medium-aged cheeses.
