Manual harvest between the end of August and the end of September, depending on the variety; soft crushing, cold static decantation, fermentation at a controlled temperature of 18/19 °C; the tirage phase begins in February and the bottles remain on the lees for at least 60 months in the basement of the old cellar.
Bright yellow colour with golden reflections, fine and persistent bubbles; nose of great elegance and balance, aromas of tobacco, honey, apricots and hints of citrus; ample and creamy sip, very lively, with acidity that best supports the wine’s structure.
Lobsters, crabs, caviar, truffle dishes, mature cheeses.
