Description

Spontaneous fermentation in open steel tanks, with 4 days of contact with the skins. Manual cap breaking. Unfiltered. No temperature control. Aged for 6 months in steel tanks.

Tasting

A vibrant red with intense aromas of red fruits, mulberry, chalk, and cherry. The fruit returns prominently on the palate, and it finishes slightly tannic.

Pairings

Stewed or grilled meats, first courses with game sauces, mature cheeses.
