Description

Soft crushing and destemming, fermentation with maceration at a maximum temperature of 26/28°C for 7/8 days; two/three daily pumping overs. Aging in oak barrels followed by bottling and refinement in horizontal bottles.

Tasting

Brilliant ruby red color that fades with aging; delicate and fruity nose reminiscent of raspberry and violet and which becomes ethereal as it ages. Dry, harmonious, full-bodied sip, which with refinement becomes soft, velvety and with good persistence.

Ground first courses, grilled or roasted meats, game, mature cheeses.
