Description

After the manual harvest in boxes, the pressing of the bunches takes place within half an hour of harvesting with soft pressing at controlled pressure. Primary fermentation in steel, bottled and refermented at a controlled temperature; at the end of the fermentation process it rests for 9 months on the yeasts.

Tasting

Straw yellow color with faint greenish reflections; fine and persistent bubbles. Fresh, fruity with savory notes, very pleasant.
