Description

The grapes are harvested by hand. After pressing and destemming, the must remains to macerate in steel tanks for 4/5 days, then it is drawn off and placed in an autoclave with the natural sugars of the grapes and its own Native yeasts for refermentation. After bottling, the bottles rest for a short period in the dark before being put on the market.

Tasting

Intense and brilliant ruby red color, with violet reflections that are found in the creamy foam. Intense, vinous nose, with strong notes of morello cherry, berries and violet. Sip with good structure, nice balance between fine-grained tannins and residual sugar, and a persistent finish.

Pairings

Cured meats, cotechino, fresh pasta with meat sauce, bread and sausage.
