The must is cooled to 8° for 24 hours; fermentation is controlled between 12° and 13° for 60 days; refinement takes place in stainless steel tanks with frequent batonnages for 6 months, then 3 months in the bottle before being released for sale.
Nose of white flowers and fresh fruit, with mineral and aromatic herb notes; fresh and agile sip, with good tension and persistence.
Aperitif, seafood appetizers, fresh cheeses.
