Ninety percent of the bunches are destemmed, while 10% are whole bunch. Maceration on the skins lasts about a month and takes place in underground qvevri, followed by another five months in amphorae. Malolactic fermentation is completed, and the wine is unfiltered.
White wine with good complexity, fresh and salty, very drinkable.
Land and sea appetizers, grilled shellfish, cured meats and cheeses.
