Kosmos Riserva Olevano Romano DOC 2016

From the “Monte Rossa” vineyard, at 450m above sea level, the winery’s oldest vines, over 75 years old; spontaneous fermentation with Native yeasts and maceration for 25 days, maturation in steel for 12 months and in large oak barrels for another 18 months; finally refines in bottle for a year.

Bright garnet red colour, the nose is complex, spicy, with notes of vanilla, cocoa, pepper, cherry and white chocolate morello cherry. The sip is fresh, long, dry and clean, with an excellent tannic finish.

Cured meats and mature cheeses, roasts, grilled red meats.
