The free-run must, obtained from the gentle pressing of the grapes, ferments with selected yeasts at a controlled temperature of 15°C. The secondary fermentation takes place in an autoclave using the Charmat Method at 15°C.
Fresh nose of citrus, white peach and quince, with notes of rose and fragrances of bread crust.
Aperitif, fish appetizers, shellfish and molluscs, white meats, cured meats and cheeses.
