The freshly pressed grapes are immediately refrigerated and thus kept protected from yeasts. At a later stage, fermentation is carried out in an autoclave until reaching 7% alcohol and secondary fermentation.
Straw yellow color with greenish reflections, fine and persistent effervescence; intense nose of honey and citrus fruits, sweet and fresh on the palate, with good minerality and persistence.
Desserts in general, spoonful gorgonzola, informal snacks.
