Fermentation occurs spontaneously in 600-liter barrels; the wine is bottled before the end of the alcoholic fermentation which is completed in the bottle without any additions, making it sparkling.
Nose of white flowers and apple, with marked iodine notes; sip of marked minerality, fine and very fresh.
Aperitif, cold cuts and cheeses, shellfish, fried seafood.
