Manual harvest in the second half of September from a small plot of Chardonnay at 600 meters above sea level; white vinification at a controlled temperature of 19°C, maturation in steel until tirage; the bottled wine ages on the yeasts for 770 days, immersed 20 meters deep in the bottom of Lake Levico Terme, where the temperature is constant at 8°C. Not dosed.

Nose of quince, candied fruit and small pastries; elegant and complex sip.
