Manual harvest in the first ten days of October, spontaneous fermentation in steel for 10/15 days; maceration for another 20 days with traditional immersion of the cap; separate maturation in cement, tonneaux and large barrels for 12/18 months, assembly and rest for another 6/12 months.
Brilliant ruby red colour; broad and intense nose of ripe fruit with slightly spicy notes; decisive, full sip, with soft and balanced tannins.
Ground appetizers, first courses with meat sauces, roast meats, cured meats and medium-aged cheeses.
