The Vigneti de Le Zalte are located in Picedo in the municipality of Polpenazze del Garda. The soils are of predominantly sandy-calcareous morainic origin. After manual harvesting and destemming and soft pressing, the grapes are placed in small steel fermenters, where alcoholic fermentation begins spontaneously thanks to Native yeasts. After a 20-day maceration, the must is separated from the skins and placed in barriques where the alcoholic fermentation ends, the malolactic fermentation occurs naturally, and it matures for 16 months before being bottled.
