Description

Manual harvest at the end of August and soft pressing with dry ice. controlled temperature fermentation and maturation of the base wine for 4 months with batonnage. Second fermentation in autoclave for 6 months at a controlled temperature of 16°C with batonnage. Subsequent filtration and isobaric bottling.

Tasting

Greenish yellow colour, fine and persistent bubbles; citrus nose, of lime and grapefruit, with notes of white flowers; fresh sip with citrus hints, light and with a creamy bubble that gives pleasure to the sip.
