Manual harvest, destemming of the grapes, spontaneous fermentation with three weeks of maceration on the skins; maturation in barriques from the second to the fifth passage for 15/18 months; assembly and bottle aging. No addition of sulphites.
Intense nose, of dark dried flowers, berries and wild herbs, with balsamic and mentholated notes; fresh, savory and mineral on the palate, with dense tannins and long persistence.
First courses with game sauces, stewed red meats, grilled white meats, mature cheeses.
