Description

Soft crushing-destemming, maceration for about ten days, spontaneous fermentation at a controlled temperature of 24°C; racking and further light pressing. Maturation in stainless steel for at least 24 months. Refermentation in the bottle thanks to the addition of the same refrigerated must. Bottle refinement for at least 6 months.

Tasting

Aromas of grapefruit and quince, fresh and savory sip with a pleasant natural acidity.
