After harvesting and pressing the grapes, natural fermentation takes place with pied de cuve; at the end of fermentation the wine is bottled so that it can finish fermentation in the bottle and therefore become sparkling (ancestral method). This part of the fermentation has a variable duration ranging from a couple of weeks up to 40-50 days. The refinement before sale lasts at least 6 months.
Pale yellow colour, veiled. Intense nose, very persistent, fine, fruity, with hints of bread making and wild fennel. Dry, acidic, refreshing, quite soft on the palate; of great persistence, balance and finesse.
Aperitif, cured meats and cheeses, savory pies, pizza.
