Description

Manual harvest with selection in the vineyard in the second ten days of September; the grapes are delicately destemmed and left to macerate with the skins for two days, encouraging spontaneous fermentation; the wine matures on the fine lees, partly in wooden barrels and partly in stainless steel, until spring with initial batonnage every 4 days; it is then bottled in the waning moon without being filtered.

Tasting

Brilliant golden straw color; very elegant nose, fresh, floral, with a beautiful fragrance and lightness, with notes of anise, stone, salt and white holes; sip of great incisiveness and cleanliness, well tense, dynamic, dry, mineral, of great liveliness and energy, harmony and balance.

Seafood appetizers, crustaceans and molluscs, vegetarian dishes, lightly matured cheeses.
