The harvested grapes are destemmed and the berries, before being delicately pressed, are carefully selected on the sorting table. They are then transferred by gravity into 60hl truncated conical tanks for alcoholic fermentation. After racking, malolactic fermentation takes place in barriques. The wine ages for 16 months in French oak barrels. After an initial period in separate batches, the wine is blended to complete the refinement.
Deep ruby red color with purple highlights; intense and complex nose of ripe black berries, with spicy and balsamic notes, and hints of cocoa and licorice; rich and vibrant on the palate, with a balanced structure, silky tannins and a long finish, with a dark chocolate finish.
Stewed meats, braised meats, stews, game, mature cheeses.
