Manual grape harvest in mid-September, soft pressing and re-fermentation in autoclave using the Martinotti method.

Pale straw-yellow colour tending towards greenish, with fine perlage; fruity nose with a slightly aromatic note, fresh, pleasantly soft mouthfeel, with good persistence and an aromatic note from Peverella.

Vegetarian dishes, light appetisers, fresh cheeses.
