Merlot Friuli Colli Orientali DOC, 2020

Manual harvesting in boxes with selection of the bunches, in the first week of October; destemming and fermentation for 15 days at a controlled temperature of 26/27°C, with two pumpovers per day; racking at the end of fermentation, cold stabilisation at a temperature of 4/5°C for 5 days; maturation in steel casks and ageing in the bottle.

Ruby red colour with violet hues; intense, pleasant, balanced nose of cherry and sour cherry, with delicate hints of raspberry; dry, well-balanced palate with good persistence.

Earthy starters, first courses with meat sauces, roasts, medium-aged cheeses.
