Description

Manual harvesting in boxes with selection of the bunches, in the first week of October; destemming and fermentation for 15 days at a controlled temperature of 26/27°C, with two pumpovers per day; racking at the end of fermentation, cold stabilisation at a temperature of 4/5°C for 5 days; maturation in 500-litre oak casks for 36 months, bottle ageing.

Tasting

Strong ruby red colour with garnet hues; intense and complex nose, dominated by fruity notes of morello cherry and black cherry, tamarind, then raspberries and other small berries; light tertiary notes of leather, coffee and liquorice; on the palate the tannin is present, but its texture is soft and gives balance and finesse to the wine.
