Manual harvest at the beginning of September; soft pressing with dry ice and fermentation in steel at a controlled temperature, limiting the contact of the wine with oxygen during all its phases. Subsequent maturation of the wine for 6 months in steel with weekly batonnage, bottling the following spring.

Straw yellow color with greenish hues; aromatic and delicate nose, fruity and floral, with notes of aromatic herbs; very harmonious fresh sip, with good acidity.

Aperitif, appetizers, seafood dishes, ravioli with butter and sage.
