Description

Spontaneous fermentation in open tanks, with occasional punching down; matures for a year in used barriques, rests in cement before being bottled and finally refines in the bottle.

Tasting

Nose of pepper, flint, black cherry and aromatic herbs; sip that captivates for freshness and momentum. Very enjoyable and emblematic.
