Nebbiolo 100%
Harvested by hand in small boxes of 20kg each in the first week of September; after a brief stop in the cold room, soft pressing of the whole, non-stemmed grapes follows. Fermentation of the must for 20/25 days at a controlled temperature of 16/18°C. This is followed by a period of maturation of the wine in concrete tanks until the spring/summer following the harvest; permanence on the yeasts for 24 to 36 months and after disgorgement, refinement for 6/12 months before being put on the market.
Ancient pink colour, fine and persistent perlage; broad and floral nose, with notes of dog rose and peach blossom; crisp and well balanced, dynamic and elegant sip.
Land and seafood appetizers, fish-based dishes, white meats, cured meats and mature cheeses.
