The fully ripe grapes, harvested between mid and late August, ferment spontaneously in steel with the skins for about fifteen days; it remains in steel until the following spring with continuous batonnage, carried out according to the lunar phases.

Fragrant nose, of yellow flowers and officinal herbs; aromatic sip, with a pleasant freshness and savouriness.
Raw seafood, shellfish, vegetable first courses.
