White wine vinification with pneumatic pressing of whole clusters and fermentation of the free-run must only at a controlled temperature in stainless steel; subsequent 6 months on the fine lees, without malolactic fermentation. The wine ages on the lees in bottle for 40 months, 36 of which at 40 meters in the depths of the mountain lake. Constant temperature and pressure, total darkness.
Bright straw yellow color, very fine and persistent perlage; nose of apple and medlar, with notes of aromatic herbs and bread; elegant, taut and vibrant on the palate, savory and mineral, very clean; long citrus and balsamic finish.
Raw fish, delicate seafood appetizers, freshwater fish, roasted white meats, medium-aged cheeses.
