Description

Harvested by hand in small boxes of 20kg each in the first week of September; soft pressing of whole, non-stemmed grapes. Fermentation of the must without maceration on the skins for 15/20 days at a controlled temperature of 16/18°C; Refermentation and second fermentation in autoclave (Martinotti method) with permanence on the yeasts for 8 to 12 months; followed by a period of refinement in the bottle of 6/12 months before being put on the market.

Tasting

Ancient and delicate pink colour, with a fine and persistent perlage; intense and floral nose, of dog rose and peach blossom; fresh and soft sip, of discreet complexity.
