Description

The grapes are pressed and left to ferment spontaneously on the skins for at least 10-12 days in stainless steel tanks at a maximum temperature of 28°C. Once alcoholic fermentation is complete, the wine is transferred to a wooden barrel, where it will rest for at least 15 months before being bottled. It lends itself to very long aging.

Tasting

Ruby red color with garnet shades. Deep nose of citrus, artemisia and pepper. Round sip elongated by a fine acid vein.

Pairings

Important first courses and stewed meats. Medium-mature cheeses.
